Not to be confused with iced-coffee (in which hot or chilled espresso-based coffees are served over ice), cold brew takes coffee grounds steeped in room-temperature water for up to 24 hours to produce a concentrated coffee essence which is then diluted with water, usually by 50 percent.

This super strong, bracingly cold ode to coffee geeks everywhere is served at the following locales.

Antoinette's Patisserie, Hastings: This cozy French cafe has been louded for its local branded coffee line "Giacobean," which supplies many area restaurants and eateires. With its cold brew, it uses five pounds of coursely ground coffee and brews it in lieu of hot water; then lets the concentrate sit for a 15 to 20 hour period, and then filters for clarity. The result is a deep, rich taste witih a third of the acidity. Pair with a pastry for a taste of morning heaven. Get Caffeinated: 417 Warbuton Ave., (914) 478-7200.

Coffee Labs Roasters, Tarrytown: Owners Mike and Alicia Love take their coffee very seriously, even offering a brewing guide on their website. Cold brew is made in house and makes for a great pick-me-up. Get Caffeinated: 7 Main St. (914) 332-1479.

Halstead Ave Taqueria, Harrison: The cold brew is made in house using coffee from Mexico. It's served in mason jars with cane sugar but there is also an option sans sugar. Get Caffeinated: 261 Halstead Ave., (914) 341-1283.

Polpettina, Eastchester and Larchmont: Real food, locally sourced and globally inspired is the mantra at Polpettina where Blue Bottle cold brew coffee is created the New Orleans way. Get Caffeinated: 102 Fisher Ave, Eastchester (914) 961-0061; 147 Larchmont Ave., Larchmont, (914) 341-1460.

Sherry B. Dessert Studio, Chappaqua: Get ready for a tastebud sensation with organic, direct trade, freshly roasted coffee from Counter Culture. Options include hand poured Japanese iced coffee and even an iced coffee growler (bring in your own and sherry b. will fill it with freshly brewed). Counter Culture coffee is also used into their desserts such as the coffee ice cream. Get Caffeinated: 65 King St., (914) 238-8300.

And stay tuned... Peekskill Coffee House plans to jump on the cold brew bandwagon within the next month or so.
