The concept behind Salsa Fresca, at 36 Triangle Center, is a simple one, according to the store's co-owner Marc Miles: casual Mexican food, quality ingredients, quick lines and affordable prices.

"The baseline behind everything is it’s build your own," he said.

Customers can fill their burritos, tacos, quesadillas, nachos, salads, or bowls with chicken, shredded beef, ground beef, pork, roasted veggies or rajas (peppers and onions), and can add-in rice, black beans, cheese, guacamole and more. Miles' personal favorite item is the buffalo chicken quesadilla. View the full menu here.

"All of our food is delivered fresh daily," Miles said. "Nothing is frozen. And we make everything in house. The guacamole, all the salsas, and all of the proteins are made here. The pork and the beef, like the barbecue beef, we braise it for six hours and hand-pull it."

Salsa Fresca also has vegetarian and gluten-free options.

"All of the food here is, what we like to say, inherently healthy," Miles said. "Nothing is really cooked with unnecessary product; it’s really clean. The chicken is just chicken breast with some seasoning. We don’t overdo it with oils or things of that nature."

The restaurant is the third for Miles and his co-owners Seth Hirschel and John Tucker, who have other restaurants in Bedford Hills and Millerton. Hirschel and Tucker grew up in Westchester and targeted Yorktown.

"Basically we just felt like Yorktown was a big next step for us," MIles said. "We’re looking to expand, we’re looking to grow this to ten or more stores."

Salsa Fresca is eco-friendly, and uses biodegradable to-go packaging and utensils, and energy-efficient lighting and cooling. In about three weeks, the restaurant will begin to make deliveries with its mini Smart car.

Salsa Fresca is open seven days a week from 11 a.m. to 9 p.m., and hours may be extended during the summer. Miles is also exploring a liquor license to serve beer and margaritas.
